Sweet Potato Breakfast Skillet
The beauty of a breakfast skillet is how delicious and easy it is! The fact that you make this in one pan makes clean up a breeze.
Ingredients
- 3-4 slices bacon (crumbled)
- 1 sweet potato (diced or shredded)
- 1 onion (diced)
- 1 apple (diced)
- 1 cup spinach
- 1 tsp. cinnamon
- salt & pepper (to taste)
Directions
- Cook your bacon in the skillet until done. Remove from pan and set aside.
- Cook the diced sweet potato and onion in the bacon grease* until just softened (around 15 minutes).
- Add the diced apple and spinach (cook for a few minutes more).
- Top with cinnamon, salt & pepper.
- Remove from heat. Crumble bacon over top. Enjoy!
*If you are not including the bacon, you will need to substitute another healthy fat such as 1 TBSP of coconut oil.
